At first I thought it was something imported, since I have never seen anything like it. Then I noticed how many bits it borrowed from a Chrysler.
It almost seems like LongVoyager decided to make use of all that fiberglass he has sitting around to transform his van into a food truck with questionable design choices.
The proportions on this thing are so strange. Even stranger when you realize where the steering wheel is. Yes, all the space in front of that wheel is an engine cover. Why they felt the need to cover it up with glass I have no idea.
It does give it a cute but stubby look, which I suppose is desirable in a food truck.
I’m pretty sure a first generation Dodge Caravan had to die to make this. The headlights are all minivan and the grille is designed to look like the one that originally fit the lights. Oh, and Ram wheels for some reason.
So, do we think this is homemade? A fiberglass kit car built on a shortened something or other frame using common junkyard bits? The front bumper is so strangely shaped to conform to the body I don’t think this is homemade.
The interior is minimalist, but the Chrysler steering wheel seems to point towards it maybe being a chopped up minivan. Imagine working on that engine. Looks like a nightmare.
Oppo, do you have any explanation for this strange creation?
EDIT: So Two Wheels Only found another Enterprise Food Truck for sale that is very similar, so it is not a one off, but the internet seems surprisingly devoid of any information on these.

It reminds me of one of those photochops that make cars have the cab go all the way forward except this is real. WHHHHY was this not a thing before?

Okay, first off, that is an unusual but neat quad tone paint job. Brown, orange, yellow, white, it seems very 70s. Oh, and orange wheels.
I didn’t take a look at the rear, but it sure is funny looking.
It appears that it has the exact same interior furnishings as the one I saw. Built in food preparation counters.
And it also has the Caravan front end.
Why does this exist at all?
Go od detective work though. An Enterprise what though?

I have not fou nd any info on the company that made these. My first inst inct was Utilimaster, because they made a van on the Caravan chassis called Aeromate. Some were food trucks.
So, after much searching, I have found the answer to these vans whereabouts from Popular Mechanics July, 1986 issue. The Enterprise Food van was built and sold by the London Group of Beverly Hills, CA.

I’m surprised you found that. It is just a tiny little blurb. Must not have been very successful.
It says Chrysler engine but I think they borrowed more than just the drivetrain. And they literally named it the Food Van.

It was rather difficult to find the right search words. Enterprise and van gave me results for a certain rental car company.
The search using “ Enterprise Food van built on chrysler mini van chassis” got me that result.

“Enterprise Food Van" is just about the worst combination of words imaginable for trying to Google search an obscure thing. I'm impressed and confused that more of these were made.

Yes, Enterprise food van was a terrible search.
One would think that there would be more information just because it was the first OEM propane vehicle built in the USA.
I could not find any other information about the company or the vehicle.

Would you sell much shaved ice with that name though? The engine would be in the way in the middle but would make a great makeshift stove for all that shaved ice you are cooking.

It looks like a hotwheels car... I dig it. It’s tiny and get s the job done, why bother with a big, honkin’ food truck when a food van is just as good?

But the interior is soooo much smaller the the exterior. It really limits what you can do with it.
